Duck with Red Cabbage & Cranberries

Recently I used duck, red cabbage &  dried cranberries as a filling for pierogi and really liked the combination.  I was pleased with the easy way I made the red cabbage mixture so I decided to use this with pan fried duck breast.

It turned out  well very and I think this will be replacing my slow cooker red cabbage method especially to use with quicker pan fried or grilled meat.

Ingredients for Cabbage & Cranberry Mixture

  • 1 small red cabbage (around 600g once core removed)
  • 100 -150g of dried cranberries
  • 2 – 3 tablespoons of butter
  • Salt & ground black pepper

Method

Rather than boiling, steaming or slow cooking the red cabbage, I used a sort of stir-fry & braising method which worked very well.

  • Put the cranberries in a dish and cover them with some boiling water and leave them for about half an hour.
  • Shred the cabbage.
  • In a deep frying/ saucepan heat some water and add the butter.
  • Stir in the cabbage and simmer gently for a few minutes.
  • Cover the pan – a glass lid is good so you can see what is happening – you need to check and stir occasionally.
  • Simmer for around 10 minutes.
  • Add the cranberries & water, stir and on put the lid back on.
  • Simmer for around 10  to 15 minutes.
  • Keep a check on the water so it does not dry out.
  • If the cabbage has not cooked enough – adjust the water and cook for a bit longer.

Ingredients – Duck

  • Duck breasts – 1 per person
  • Italian herbs
  • Salt & ground black pepper

Method

  • Rub the duck breasts with Italian herbs, ground black pepper and salt and leave for at least an hour.
  • Pre-heat the oven to GM5 – 190°C
  • Put a baking tray in the oven for around 10 minutes to heat up.
  • Heat a heavy based frying pan (I use a cast iron pan) until it is very hot –  you do not need any added oil or fat.
  • Place the duck breasts in the pan skin side down and turn the heat down to medium and cook for 2 minutes. Turn them over and cook for a further 2 minutes.
  • Put the duck onto the heated baking tray.
  • Bake in the oven for around 15 minutes.
  • You can serve the duck breast as whole pieces or slice them up.
  • Place the duck on top of the cabbage and cranberry mixture to serve.

Salads with a Hint of Breakfast!

Having written several posts recently with different ideas for breakfasts,  I started to think about how to use some of these ingredients such as smoked bacon & eggs in salads.

Version 1 with lemon juice

Ingredients

  • 1 iceberg lettuce
  • 1 cucumber
  • 4 hard boiled eggs
  • 250g smoked bacon
  • Lemon juice
  • Chives to garnish
  • Salt & pepper to taste

Method

  • Cut the lettuce into shreds with a sharp knife.
  • Peel the cucumber or part peel in stripes lengthwise.
  • Chop the cucumber into small pieces.
  • Chop up the hard boiled eggs into small pieces.
  • Chop up the bacon into small squares and fry without extra oil until all the fat has come out.
  • Use kitchen roll to soak up the excess fat and leave to cool completely.
  • Mix all the ingredients together
  • Add salt & pepper to taste.
  • Add the lemon juice and stir.
  • Add chopped chives to serve.

 

 

 

Version 2 with soured cream

  • 1 iceberg lettuce
  • 1 cucumber
  • 4 hard boiled eggs
  • 250g smoked bacon
  • Lemon juice
  • 2 -3 tablespoons of soured cream
  • Salt & pepper to taste
  • Chives to garnish

Method

As version 1 with the addition of the soured cream at the end.

 

Version 3 with tomatoes

  • 1 iceberg lettuce
  • 1 cucumber
  • 4 hard boiled eggs
  • 250g smoked bacon
  • 20 cherry tomatoes
  • Lemon juice
  • Chives to garnish
  • Salt & pepper to taste

Method

As version 1 with the addition of the chopped cherry tomatoes.

Ogórkowa – Gherkin soup

Four years of blogging today!

I can hardly believe it!  I posted my first post four years ago today. The time has gone so quickly and there is still much more to do.

This will be post number 208 – so averaging at 1 per week.

Today it just has to be a very Polish recipe.

Ogórkowa gherkin soup is a classic Polish soup.

It is sour and as I have written before, this is a taste much loved by the Poles!

It can be made in the winter from stored ingredients but it is also very refreshing on a summer’s day.

The most traditional soup is made from brine fermented gherkins but you can use pickled gherkins.

 

Ingredients

  • 250g gherkins
  • 125ml  gherkin liquid
  • 1.5 litres of soup greens/vegetable stock (can be from cubes or powder)
  • 4 medium potatoes, peeled – boiled or steamed
  • 125ml of soured cream
  • Chopped dill to serve

Method

If you have some potatoes boiled already this is a very quick soup to make.

  • Add the gherkin liquid to the vegetable stock and bring to the boil.
  • Rough chop the gherkins.
  • Drop the gherkins into the liquid and simmer for around 20 -25 minutes.
  • Chop the boiled potatoes into rough cubes.
  • Add the potatoes, stir and simmer for around 1-2 minutes.
  • Stir in the soured cream and chopped dill.

Sauerkraut Rye Bread

My cousin who lives near Chicago recently sent me a recipe that has been used by her mum for Polish sauerkraut rye bread.

The recipe was from a bakery in Chicago and was printed in the Chicago Tribune on 2 March 1989.

Well of course I had to try this out!

The recipe is in cups, which except for liquids, I find hard to work with for consistency – so I  did some conversions into grams.

Note -The amount of sauerkraut was  3/4 of a cup – I measured out a loosely filled cup and weighed it.

This recipe makes one very large loaf – you can use it to make two loaves.

There is a large amount of flour – I mixed it by hand which was quite hard work but after the first rise it was a good dough to work with.

Ingredients

  • 880g plain flour (650g & 250g)
  • 170g rye flour
  • 40g butter
  • 1 tablespoon of salt
  • 1 tablespoon of granulated sugar
  • 1 tablespoon of dried yeast
  • 100g sauerkraut
  • 500ml warm water
  • Cornmeal or semolina for the baking tray
  • 1 egg yolk & 1 tablespoon of milk to glaze
  • 2 teaspoons of caraway for topping.

Method

  • Into a large bowl add 650g of plain flour and rye flour.
  • Rub in the butter.
  • Add the salt, sugar and yeast.
  • Chop the sauerkraut with a sharp knife into small pieces.
  • Add the sauerkraut to the flour and mix together.
  • Slowly add the water and bring the mixture together.
  • Slowly add the rest of the flour (you may not need it all) until the dough does not stick to the sides and start to gather it together into a ball.
  •  Knead the dough for around 5 minutes.
  • Cover the dough with a cloth or clingfilm.
  • Leave it to rise until it is double in size.
  • Punch the dough down and knead it again for a few minutes.
  • Allow the dough to double in size again
  • Punch the dough down again and knead it again lightly.
  • (You can divide it into two here if you want to make two loaves)
  • Put the dough onto a board and flatten it into a rectangle.
  • Shape into an oval.
  • Cover a baking tray with cornmeal or semolina.
  • Place the dough onto the baking tray.
  • Cover and let the dough rise until it is double in size.
  • Pre-heat the oven to GM 6  – 200°C.
  • Brush the glaze onto the loaf
  • Sprinkle with caraway seeds note I would cover the seeds with glaze again as well next time.
  • Using a sharp knife make 4 or 5 diagonal cuts in the top of the loaf.
  • Bake for 20 minutes.
  • Turn the oven down to GM4  – 180°C.
  • Bake for another 10 to 15 minutes.

It was delicious with a great texture!

I sliced up some of the loaf and froze it  – that worked well.

I might just add some more caraway seeds to the dough itself next time.

Waffles

On a super, short holiday in Gdańsk just before Easter, I had several delicious breakfasts in a restaurant in the Old Town called Gvara- the name is based on the Polish word gwara which means dialect (Polish does not have the letter v !).

Two of the breakfasts were waffles served with savoury toppings. First with smoked bacon and eggs and then with fried onions, red peppers and spinach – topped with a poached egg – I was converted!

On my return I had to recreate these lovely dishes!

On previous visits to Poland I have always been surprised to see how popular waffles (gofry in Polish – from the French  – gaufres) are.

These waffles, which are often sold on street stalls or at fairs are usually sweet with the addition of sugar and jams etc.

A Short History of Waffles

In ancient times the Greeks cooked flat cakes, called obelios, between hot metal plates.

Over time they became popular throughout medieval Europe, the cake mix, a mixture of flour, water or milk, and often eggs, were also cooked over an open fire between iron plates with long handles.

Paintings from the 16th century by Joachim de Beuckelaer, Pieter Aertsen and Pieter Bruegel show waffles being cooked.

The word waffle first appears in the English language in the 18th Century – it comes from the Dutch wafel & Middle Dutch wafele – the word for a wafer.

Originally they were made without a  raising agent.

Nowadays waffles are made from a batter with yeast or baking powder (invented by the English chemist Alfred Bird in 1843)and are cooked between two patterned plates.

In some versions, the waffles are thin and more crispy – more biscuit like.

Early waffles were unsweetened or sweetened with honey and sugar-sweetened waffles were expensive.

By the 18th century, the expansion of Caribbean plantations had cut sugar prices in half and recipes abounded with much use of sugar.

Making Waffles

I bought an electric waffle maker, which makes thick waffles. It is by Salter and I am very pleased with it.

Baking Powder Waffles

This recipe is based on the one in the recipe book that comes with waffle maker.

I used whole milk and found this worked very well.

Other recipes I looked at used buttermilk, so I tried this with a yoghurt & milk mixture – they tasted okay but the mixture escaped out of the maker quite a bit – so there was a lot to clean up.

Ingredients

  • 250g plain flour
  • 2 tablespoons of granulated sugar
  • 4 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 2 egg
  • 90g of butter
  • 350ml of whole milk

Method

This amount made eight waffles in my maker.

It is best to make all the waffles at once and either keep them warm in a low oven or you can pop then in a toaster later.

  • Mix the flour, salt, sugar and baking powder together in a bowl.
  • Melt the butter.
  • Beat the eggs until they are fluffy.
  • Add the eggs and then the milk to the flour mixture and mix well.
  • Add the melted butter to the mixture and mix well.
  • I made the waffles as per the instructions of the waffle maker.
  • Pre-heat the maker for around 5 minutes.
  • Brush some oil or butter onto the plates for the first batch.
  • Use a ladle to pour on the mixture – filling the plate till around 3/4 full.
  • Cook for around 5 minutes – all steam should have finished being given off by now.

Yeast Waffles

The batter is left to rise overnight.

Ingredients

  • 100g butter
  • 400ml milk (whole or semi-skimmed)
  • 360g plain flour
  • 1 tablespoon granulated sugar or honey
  • 1 tablespoon salt
  • 1 tablespoon dry yeast
  • 1 teaspoon salt
  • 2 eggs

Method

This amount made around eight waffles in my maker.

You can make all the waffles at once and either keep them warm in a low oven or you can pop then in a toaster – with this yeast batter you can stagger the timing a little if you do not want to make them all at once.

  • In a saucepan melt the butter.
  • Add the milk and heat up the mixture.
  • Leave to cool to hand heat.
  • In a bowl mix the flour, sugar (or honey), yeast and salt.
  • Whisk the eggs till frothy.
  • Add the eggs to flour mixture.
  • Add the cooled butter/milk mixture.
  • Cover the bowl with cling film and leave in the fridge overnight.
  • As above, I made the waffles as per the instructions of the waffle maker.
  • Pre-heat the maker for around 5 minutes.
  • Brush some oil or butter onto the plates for the first batch.
  • Use a ladle to pour on the mixture – filling the plate till around 3/4 full.
  • Cook for around 5 minutes – all steam should have finished being given off by now.

 

Toppings for the Waffles

 

Bacon & Eggs

  • Grill or pan fry, without oil,  some smoked bacon rashers.
  • Soft fry or poach eggs.
  • Pour some maple syrup on the waffles
  • Place some rashers of bacon on the waffles
  • Top with the egg.

 

Fried onions, red peppers, spinach & egg

Ingredients

  • Onion – around 1/2 per waffle
  • Red pepper – around 1/2 per waffle
  • Fresh spinach – a large handful per waffle
  • 2-3 tablespoons of butter – depending on how much you are making.
  • Salt & ground black pepper to serve.

Method

  • Slice the peppers into long strips
  • Blanch the peppers with boiling water and leave for at least 15 minutes.
  • Use a deep frying pan with a lid (a glass one is best).
  • Melt the butter in the pan on a gently heat.
  • Slice the onions into strips and fry gently in the butter till soft and golden.
  • Dry the peppers and add these to the onions and cook gently with the lid on for some of the time.
  • Put the spinach on top, put on the lid and allow it to cook in the steam.
  • Take off the lid, stir and cook off  excess liquid.
  • Place some onions, peppers and spinach a waffle.
  • Season with salt & ground black pepper
  • Top with a soft fried or poached egg.

Buckwheat Pancakes – New Ideas 2

I have recently returned from a super, short holiday in Gdańsk and in one restaurant I saw on the menu pierogi (Polish filled pasta) which had leeks, peas and soured cream as a filling –  I liked the idea of the sweetness of garden peas with leeks and thought  I could adapt this and use it as a filling with buckwheat pancakes.

Buckwheat Pancakes

Ingredients

  • 75g buckwheat flour
  • 25g plain flour
  • 2 eggs
  • 125ml of milk (full or semi-skimmed)
  • 125ml of water
  • 25g of  melted butter
  • pinch of salt
  • Some extra milk might be needed.

Method

  • Beat the eggs and add then them first to the sifted flour.
  • Add the milk mixture to the egg and flour mix until you have a batter the consistency of pouring cream.
  • Mix the milk with the water
  • Add the milk mixture to the egg and flour mix until you have a batter the consistency of pouring cream.
  • Leave the batter to stand for at least 1 hour in which time it will thicken, then add a little more liquid.
  • Use a special thin pan which you use just for pancakes, mine has a base diameter of 20 cm and is made of steel, once seasoned, just wipe it clean between uses with kitchen roll – never scour it or use detergent.
  • Work out how much batter you need for a pancake and find a measure which will then give you a consistent amount – I use a small ladle which holds 45ml.
  • Have a dish of melted butter or margarine and sunflower oil for frying so you can add just enough and tip some back if needed.
  • Heat the pan – you want a high heat but not too much to burn the pancakes – you will find you have to keep adjusting the heat. (As I cook using gas this is easy to do).

  • Cook the pancakes on one side and turn then over – you can make them up one by one or stack then up with a piece of greaseproof paper in between them. You can do this and leave then for later use.

  • 3 leeks – chopped
  • 100g frozen peas
  • 2-3 tablespoons of butter
  • 2 -3 tablespoons of soured cream
  • Using a deep large frying pan with a lid (a glass one is best), melt the butter and gently cook the leeks to soften them but not brown.
  • Add the frozen peas and cover with the lid and cook for a few minutes.
  • Stir the mixture and add the soured cream.
  • Place some of the mixture on a cooked pancake  in the centre and out to the sides – but not quite to the edge.
  • Fold in two of the opposite sides and then roll up the pancake from the long end to make a long parcel.

Other Ways to use the Filling

The leek & pea mixture goes really well as a vegetable to serve with roast chicken.

Or heat some cooked chicken breast pieces with the leeks & peas.

I think some pasta would also be good with this, though have not yet tried this yet.

Lemon Icing – American Style

I used to work online for an organisation in America and I still correspond by e-mail with one of my old colleagues.

He sent me a recipe for a Lemon Cake which his maternal grandmother, Maude Hodge, used to make, saying that this was his favourite cake and she often made it for his birthday.

My nephew, who is now working in America, loves lemon cake – I made him two types when he was here on a visit over a year ago – see previous posts – Lemon Drizzle and Lemon Cream Roulade.

I am sure he will love this one and if he makes it – the recipe will have crossed the Atlantic and back!

The recipe is for an icing or topping, which is a “cousin” to Lemon Curd and Lemon Meringue Pie filling.

I made two cakes using 4 eggs using a butter sponge as in  – How Did My Sponge Become Sandy? You could also use a fat free sponge. (Use 21 or 22 cm diameter tins)

The original instructions said to cut each cake into two so that you had four layers – my cutting ability is not that good! (Also I liked the thick layer in the middle)

You spread the icing on the layers to sandwich them together and then cover the top and sides.

Ingredients

  • 440g of granulated sugar
  • 250ml of water
  • 3 lemons – juice and finely grated rind
  • 1 egg
  • 5 tablespoons of cornflour
  • 1 teaspoon of butter

Method

  • In a saucepan mix the sugar, egg, cornflour and water together.
  • Add the lemon juice and rind.
  • Cook over a low heat, stirring gently until the mixture thickens.
  • Remove from the heat, add the butter and stir.
  • Leave to cool.
  • Place one of the cakes on a serving plate – one with a lip is best.
  • Spread the icing on the cake.
  • Put the other cake on top.
  • Cover the top and sides.

  • Served on Aynsley – Las Palmas tea plates,  from the 1960s.
  • Coffee cups & saucers by Colclough,  Ridgway Concord,  from the 1970s.

 

 

Buckwheat Pancakes – New Ideas 1

I have two posts already about buckwheat as a grain and buckwheat flour used in a variety of pancakes.

I have recently returned from a super, short holiday in Gdańsk and had several delicious breakfasts in a restaurant in the Old Town called Gvara- the name is based on the Polish word gwara which means dialect (Polish does not have the letter v !).

One of the breakfasts was buckwheat pancakes with a filling of chopped cucumber and smoked bacon, topped with a soft cooked egg and chives.

On my return I had to recreate this lovely dish.

Ingredients

  • Cooked buckwheat pancakes
  • Chopped cucumber and smoked bacon filling
  • Soft cooked egg – poached or lightly fried
  • Chopped chives or the green parts of spring onions.

The hardest part is getting getting all the parts cooked and warm at the same time.

Buckwheat Pancakes

Ingredients

  • 75g buckwheat flour

Gulasz Soup

This is a soup I often make when I have some gulasz left from a meal, in fact I often make extra so that there is some!

There should be about 3 chunks of meat per serving – though of course that depends on the size of the chunks.

This works well with either beef or pork gulasz.

Ingredients

  • 350g of already cooked gulasz made with beef or pork, peppers and tomato such as in earlier posts.
  • 1 tin of cannellini beans – drained.
  • 750ml of chicken stock – can be from a cube or concentrate.
  • 1 teaspoon of chilli powder.
  • 2 tablespoons of tomato purée.
  • 125ml of soured cream.
  • Salt & pepper to taste.
  • Flat-leaved parsley or chives to serve & an extra dollop of soured cream if desired.

Method

  • Put the gulasz into a large pan.
  • Add the drainned beans.
  • Mix the tomato purée with the stock and add this to the pan.
  • Add the chilli powder.
  • Bring to the boil, cover and let it simmer for around 15 minutes.
  • Season to taste.
  • Gently stir in the soured cream.
  • Sprinkle on chopped parsley or chives to serve.

Note

Butter beans or haricot beans should be good too.

Pierogi with Duck

I have recently returned from a super, short holiday in Gdańsk during which I tried out many old favourites and several new dishes.

I tried pierogi in several restaurants, choicing some unusual fillings and have been inspired to make them with some new fillings.

I did find that some of the meaty ones were too big – I use a 7cm diameter cutter, which for me gives a better filling to pasta ratio. and have been inspired to make some with some new fillings.

I had several delicious meals in a restaurant in the Old Town called Gvarathe name is based on the Polish word gwara which means dialect (Polish does not have the letter v !). This restaurant serves Polish cuisine – often with a modern take and it has given me much inspiration for some new recipes.

One of the dishes there was pierogi with  duck in the filling.

On the way back to the airport the taxi driver told me that his wife would be cooking duck with red cabbage for Easter Sunday – this set me thinking!

Because I had several ducks in the freezer, I roasted these and took off all the meat – however in the future I would just buy duck breasts or legs and roast or poach them.

3 Duck Fillings

Cooked duck meat – roasted or poached  – is used in these recipes – amouts are not critical.

Fillings must be left to go cold before using.

Duck & Apple

  • 150g of cooked duck meat
  • 4 eating apples – Braeburn or Coxes are good

Method

  • Core the apples and place them in a oven proof dish
  • Cook them in a medium oven until the flesh is soft
  • Scope out all the apple flesh
  • Chop or mince the cooked duck meat
  • Combine the duck and apple flesh together.

 

Serve with melted butter – here on Royal Worcester – Evesham from 1961 onwards.

Serve with melted butter – here on La prune by  Jet for Ter Steege in The Netherlands.

Duck & Sauerkraut

  • 150g of cooked duck meat
  • Around half a large jar of sauerkraut
  • 1 onion
  • 1 tablespoon of butter
  • Pepper to taste

Method

  • Put the sauerkraut with the liquid from the tin or jar into a pan and cover with boiling water.
  • Simmer the sauerkraut gently for about 30 minutes.
  • Then uncover and boil off as much of the liquid as possible – without burning the sauerkraut.
  • Allow the boiled sauerkraut to cool.
  • Strain it using a sieve and pressing it down with a spoon to get the mixture as dry as possible (If you want you can put the strained mixture into a clean dry cotton or linen teacloth, twist the ends together to squeeze it to get it really dry).
  • Chop the sauerkraut finely with a sharp knife.
  • Chop the onion finely  and fry it gently in the butter until it is soft and golden – leave it to cool.
  • Chop or mince the cooked duck meat.
  • Combine the cabbage mixture, the fried onion and the chopped sauerkraut.
  • Add some pepper to taste.

Fried pierogi

All the butter coated pierogi that are not eaten can be fried up later – equally delicious!

 

I have written much previously about pierogi  – but have included the instructions for the dough again below.

Ingredients – Dough

  • 250g pasta flour or strong flour or plain flour & 2 tablespoons of fine semolina
  • 150ml water
  • 1 tablespoon oil – sunflower or light olive
  • ½ teaspoon salt
  • 1 egg yolk

Method

  • In a jug or bowl mix together the water, oil and the yolk.
  • Put the flour and salt into a large bowl and make a well in the centre.
  • Pour in the liquid from the jug and initially use a knife to mix this into the flour and then use your hands to mix the liquid and flour to get a ball of dough.

 

  • Turn this out onto a floured board and knead the dough for a few minutes until you have a smooth ball.
  • Cut the dough into quarters.
  • On a floured board roll out a quarter at a time until you have a sheet of thinly rolled dough.
  • Now prepare a large tray and cover it with a clean tea towel and sprinkle this with flour.
  • Have a large surface such as a tray covered with a cotton or linen cloth which has been lightly floured ready  and place the sealed pierogi on this until they are all made, do not let then touch each other.
  • I cut them out using a 7 cm diameter cutter.
  • The excess dough can be re-mixed and rolled out again.
  • Around a half tablespoon of filling is put on  each circle and then they are folded over and the edges pinched together to make a good seal.
  • You learn from experience how much filling to put in as too much will make it hard to seal them and if not properly sealed they will burst on boiling.  Do not worry if you have a few mishaps – it still happens to me even with experience – it is hard to salvage one that has gone wrong – just accept that there will be a few that you do not cook.
  • To cook the pierogi, use a large pan of boiling water to which you have added some salt and a drizzle of oil.
  • Drop the pierogi in one by one and allow them to boil.  I usually do about 6 to 8 at a time (I only do 6 at a time if using frozen ones).
  • As they cook they will float to the surface, let them boil for 2 to 3 minutes, a bit more if they were frozen, and then remove them with a slotted or perforated spoon and put into a colander above a pan for a few seconds to drain and serve.
  • Continue boiling batches in the same water.
  • If you want to make all the pierogi to serve together then you need to get a large shallow dish and put the melted butter into the dish
  • Keep the dish warm in a low oven.
  • As you take out the cooked pierogi add them to the dish, mix them with the butter to prevent them sticking.
  • Keep on adding more as they cook and keep shaking the dish to coat and mix them.
